There is basically only Speech, Lockpicking and Pickpocket. Theres also less non-combat skills that can inflate your level. The maximum level is 81, and that requires you to have 100 in ALL skills. So the higher the level, the more skill points are needed to advance another level. Then you need about 10 skill points around level 10, 15 at level 20 and so on. In Skyrim you start by leveling up first with about 4-5 skill points. In Oblivion I believe it was 1 level for each 10 points in skills. One other thing is that unlike in Oblivion, the higher your level, the more skill points need to be raised. Which makes for a excellent opportunity to level up secondary weapon skills. Even at level 20 you can get attacked by low level wolves and bandits. Then theres the fact that not all opposition level up as you do. Its challenging, but doable and will raise your combat skills whether you want it or not You could also try for a solorun, i.e with no followers. The housekarls make for awesome bodyguards, in fact, that is their main purpose. They level up when you level up and they put all their skills into combat. Also dont forget you get access to a follower pretty early who will kill stuff for you.
